Pork Belly Burnt Ends

Pork Belly Burnt Ends are commonly referred to “meat candy” among the BBQ community because they taste sweet and savory, like meat candy.

INGREDIENTS:

1 SLAB OF PORK BELLY

1/2 CUP PORK RUB

1 CUP BBQ SAUCE

4 TBSP BUTTER

2 TBSP HONEY

INSTRUCTIONS:

  1. Chop your pork belly into cubes, about 1-1/2” thick.

  2. Coat each piece of pork belly in your favorite pork rub (I recommend something with some brown sugar & spice).

  3. Lay pork belly out on a jerky tray and place on the smoker at 225F.

  4. Let smoke for about 2 hours, then pull your pork belly off.

  5. Transfer pork belly to a metal pan and coat in a warm mixture of the BBQ sauce, butter, and honey.

  6. Cover the pan in aluminum foil and place back on the smoker for another 1-1/2 hours.

  7. Uncover the pan and continue to smoke until the pieces reach an internal temperature of 200F.
