Blueberry Cobbler

Sometimes the best things in life are the most simple. This blueberry cobbler is made of just a few, fresh ingredients and it’s super easy to make! I like to throw mine on the grill to cook, but this recipe can be done in an oven just as well!

INGREDIENTS

PREP TIME 15 MINUTES

COOK TIME: 35-45 MINUTES

GRILL TEMP: 350F

THE FILLING:

3 CUP FRESH BLUEBERRIES

1 CUP LIGHT BROWN SUGAR

2 TBSP HONEY (OR AGAVE NECTAR)

PINCH OF SEA SALT (OR KOSHER SALT)

1 WHOLE LEMON

(OPTIONAL) 1 TSP LEMON ZEST

THE CRUST:

1-1/2 CUPS ALL-PURPOSE FLOUR

3 TBSP SUGAR

1 TBSP BAKING POWDER

8 TBSP (1 STICK) BUTTER

1/2 CUP SOUR CREAM

(OPTIONAL) 2 TBSP BROWN SUGAR

INSTRUCTIONS

  1. In a large mixing bowl, mix together your blueberries, brown sugar, honey, sea salt, and the juice of your lemon. You can add a teaspoon of lemon zest for an extra citrus kick, but it’s optional.

  2. Rub the end of a stick of butter all over the bottom of a 12” cast iron pan. If you don’t have cast iron, you can make this in a dutch oven or any oven-safe pan you have.

  3. Pour your blueberry mixture in the bottom of your baking pan or cast iron.

  4. In a medium mixing bowl, mix together the flour, sugar, and baking powder.

  5. Grab your stick of butter and break it up into little pea-sized pieces. You can use a fork or a cheese grater - whichever is easier! Also, you could melt the butter and add it that way, but I like using cold butter because it creates little pockets of buttery goodness in the crust.

  6. Mix until the butter and dry ingredients are well incorporated, then add your sour cream.

  7. Knead with your hands until the mixture becomes firm and dough-like.

  8. Grab medium-sized handfuls of the dough and flatten it between your hands. Lay these pieces on top of the blueberries. They don’t have to look pretty or be perfectly even, and it’s totally okay if there are gaps or areas without dough.

  9. (Optional) Sprinkle 2 TBSP of brown sugar over the top.

  10. Bake at 350F for 35-45 minutes, or until the crust is golden brown. You can make this in an oven, or just fire up the grill. We’ve even made it in a smoker before!

  11. Now, it’s ready to enjoy! I like to top my cobbler with a scoop of vanilla ice cream - YUM!
