Perfect Apple Pie
INGREDIENTS:
Cook Time: 1 hour 10 minutes
Prep Time: 30 minutes
Filling:
3lbs of Granny Smith Apples
1 cup all-purpose flour
1/4 cup sugar
1/4 cup brown sugar
1 tbsp cinnamon
Crust:
3 cups all-purpose flour
4 tbsp sugar
1/2 tsp kosher salt
1 stick of unsalted butter
1/2 cup vegetable shortening
4 tbsp of ice water
Crumble:
1-1/2 cups of flour
1/4 cup sugar
1/4 cup brown sugar
1/3 cup unsalted butter, softened
INSTRUCTIONS:
Peel your apples and chop them into small pieces (about 1-2 inches big). They don’t have to be perfect, just a rough chop will do fine!
Add the chopped apples to a large mixing bowl and add the flour, sugar, brown sugar, and cinnamon. Mix until all of the apples are well-coated. Set aside.
In another large mixing bowl, combine flour, sugar, and kosher salt.
Take a fork and break a stick of butter into little pea-sized pieces and add to the bowl.
Add vegetable shortening and mix until well-combined.
Add ice water 1 tablespoon at a time, mixing thoroughly between tablespoons. Continue this process until your dough is firm.
Roll out your dough and transfer to a cast-iron pan (or pie tin). Trim the edges so the dough is level with the top of the pan.
Pour your apple mixture on top of your dough and cover with aluminum foil. Bake at 375F for 25 minutes.
While your pie is baking, mix your crumble. Combine the flour, sugar, brown sugar, and softened butter and mix until well-combined.
After 25 minutes, pull your pie out of the oven and remove the foil. Sprinkle the crumble all over the top of the pie.
Return the pie to the oven, uncovered, and cook for another 30-40 minutes or until the top is golden brown. Then your pie is ready to enjoy!
(Optional) Serve warm alongside a scoop of vanilla ice cream.
